NC Bakery

Course Content

This course is facilitated in our fully equipped Bakery; the products produced are sold at our cafes, restaurant outlets and pop up shops thus providing a realistic learning environment. This course is the perfect starter for those interested in Bakery/Patisserie and wishing to progress a career into Bakery and also a good follow up from Cake Decorating for those coming from school. Provides learners with a range of Bakery skills and an understanding of many processes involved in baking. The following units are included: Aeration, Cake Decorating with Chocolate and Gateaux Processes, Sugar Paste Processes and Patisserie.

Entry Requirements

National 5 Hospitality school qualifications or any other relevant SCQF Level 5 qualification Hospitality and Professional Cookery or at least one year experience in the industry. Applicants may be asked to provide a reference.

Method of Assessment

Internal continuous assessments using various methods including open-book assessments, closed-book assessments, observations and projects.

Future Prospects

This course can lead onto SVQ Professional Cookery Level 7 (Patisserie and Confectionery) for those with a desire to succeed and take their skills to the next level.
